Shredded Pork Tacos


We love Mexican food around here and this recipe was an instant favorite!  Full of flavor without being too spicy and it is really easy to make.  I often make a double batch and we happily eat the leftovers for days.  :)



Shredded Pork Tacos
adapted from Can You Stay For Dinner

Ingredients:
1 lb Pork Tenderloin
12oz jar of Medium Salsa
1 Tablespoon Chili Powder
1 Tablespoon Ground Cumin
1 Tablespoon Brown Sugar
1 teaspoon Cayenne Pepper
1/2 teaspoon Salt
3 Garlic Cloves, minced

Toppings:
Flour Tortillas
Shredded Cheddar Cheese
Diced Tomatoes
Shredded Lettuce
Sour Cream

Place pork in a slow cooker.  In a medium bowl, mix all remaining ingredients.  Pour over pork and cook on low for 8 hours.  Remove to a large plate and shred using two forks.  Return to the slow cooker and mix it back into the salsa mixture.

Serve in warmed tortillas topped with cheddar cheese, tomatoes, lettuce and sour cream.
