Beef Taco Pasta


The flavor of this Beef Taco Pasta reminds me a lot of Chicken Enchilada Pasta. I loved this alternative though because we bought a quarter of beef that my father-in-law raised so we have a bunch of ground beef on hand! I have been enjoying finding new ground beef recipes so that we can use what we have in the freezer without having the same meal every night.

Beef Taco Pasta

1 lb Ground Beef
12oz Pasta Shells
1 cup Chopped White Onion
1 Garlic Clove, minced
3oz Cream Cheese
1/2 cup Sour Cream

Cook pasta according to package directions. Drain, reserving 1/2 cup of the cooking water. Set aside.

Meanwhile, in large skillet, cook ground beef and onions over medium-high heat until beef is browned and onions are tender. Mix in garlic and taco seasoning and let simmer for 5 minutes. 

In a small heat-resistant bowl, combine the cream cheese and hot pasta water until the cream cheese is melted and they are well-blended. Stir into the beef mixture. Add the sour cream and mix until everything is well-combined. Simmer for a few minutes to warm the sauce back up but DO NOT BOIL.

Pour the sauce mixture over the pasta and stir until the pasta is evenly coated. Serve warm.
