Bacon Wrapped Deer Tenderloin


Whenever we eat something new, my husband almost always says, "Is it the best _______ you ever laid your lips on?" Well this deer tenderloin is definitely the best! Shelby got it from one of the guys he works with at the welding shop. I swear a redneck man could be incapable of making himself something as simple as a grilled cheese sandwich but you put a piece of wild game in front of him and he becomes a gourmet chef! ;) This recipe makes the venison perfectly moist and tender with hardly any of the usual gamey flavor.

Bacon Wrapped Deer Tenderloin
Ingredients:
1 Deer Tenderloin
1 pkg (8oz) Cream Cheese, softened
1 Jalapeno, diced
1lb Bacon
1/2 cup Apple Juice
1 Tbsp Worcestershire Sauce
1/4 tsp Smoked Paprika
Butterfly cut the tenderloin so that it is almost cut in half. Spread the cream cheese over both sides of the cut. Sprinkle jalapenos over one side and fold the other side over the top so that the tenderloin is back to the original shape. Wrap tightly with bacon to hold it together. Secure with toothpicks, if necessary. Place tenderloin in a roasting pan with a rack.
In a spray bottle, mix apple juice, worcestershire sauce, and paprika. Spray some of this mixture over the tenderloin. Bake at 250F for 2 hours, or until meat thermometer reads 160F. While cooking, spray with apple juice every 30 minutes to keep it moist. Serve hot.
