Baked Apples


Once September rolls around, I have to break out the apple recipes. It just isn't fall without them. First up were some baked apples on pancakes since that is my favorite thing to order from Cracker Barrel. It took three tries but I finally came up with a recipe that I really like! These would also be awesome on some vanilla ice cream or you can just eat them with a fork. YUM!


Baked Apples

Ingredients:
5 small Apples*
1 Tablespoon Lemon Juice
2 Tablespoons All-Purpose Flour
1/4 cup Brown Sugar
1/8 teaspoon Ground Nutmeg
1/2 teaspoon Ground Saigon Cinnamon
1/2 cup Apple Juice

Peel apples and cut into 1/4" slices. Place in a large bowl and coat with lemon juice.

In a small bowl combine flour, brown sugar, nutmeg, and cinnamon. Add this mixture to the apples and mix until evenly coated. 

Spoon apples into a 8 x 8" x 2" glass baking dish. Pour apple juice over the top and cover with aluminum foil. (Add more apple juice than called for if you would like them to be more syrupy.)

Bake at 420F for 20-30 minutes or until apples are tender. Serve warm over pancakes or ice cream.

Serves 4.

* I used Granny Smith apples which are tart and would be particular good with ice cream. If you prefer something sweeter though you might want to try Fuji or Gala apples.
