I was playing around with an idea for some Halloween party food yesterday...
Cake ball lab rats that have escaped from a mad scientist's laboratory! Or mice. Whichever you want to call them.
I made white mice because I wanted them to have creepy red or green eyes. I still can't decide which I like better...I'm thinking maybe the red eyes. You could also make these with chocolate coating if you want them to look like everyday field mice. Then you could even use red velvet cake for the middle to add the extra disgusting effect of biting into bloody mice guts. Depending on how much of a gross factor you and your guests can stomach, you can also add some chocolate sprinkles to the plate to simulate mouse poop. I chose to keep things simple so that they would be kind of creepy but still cute enough that people wouldn't be too freaked out to eat them. :)
Supplies:
Cake
Icing
Almonds Blanched and Sliced
Candy Coating
Start by making your basic cake ball mixture (you can find directions for that part HERE). Use a cookie scoop to form balls and place on a cookie sheet lined with wax paper. Pop in the freezer for about ten minutes so they harden up a bit.
Use your hands to roll them into even balls then flatten out a bit with the palm of your hand. Shape the front to form kind of an egg shape. Press a lollipop stick into the back side (as you can see in the photo above, I started out trying toothpicks but it made the dipping part more difficult so I switched to the candy sticks). Place them back on the cookie sheet and put in the freezer for another ten minutes.
Meanwhile, melt your candy coating according to the package directions. Grab each mouse by the lollipop stick and dip into the candy coating. Gently scrape the bottom of the mouse on the side of your bowl to remove excess coating that will want to puddle around the bottom. Place back on the cookie sheet and stick on two almond slices to make the ears. Repeat with the remaining cake balls. Place the sheet in the refrigerator until the coating has hardened.
Next up are the tails. You can just leave the lollipop sticks in place or you can make squiggly tails made of candy coating.
Place some of the extra coating into a cake decorating icing bag with a small round tip (you can also just use a ziploc baggie with a bit of the corner cut off). Using another cookie sheet covered in wax paper, make 2" long squiggly lines with the candy coating. Place in the refrigerator until hardened.
Carefully remove the lollipop stick from the back of the mouse and replace with one of the candy coating tails.
For the eyes you can color some of the leftover icing, stick on a couple of round sprinkles, or use colored candy chocolate. Pop a whole family of mice on a plate or place them sporadically around your treat table like the mice are coming in to steal your snacks!
