I love using my slow-cooker in the summer and I'm sure many of you do too. You don't have to heat up your kitchen and you can toss everything together in the morning and then go out and enjoy the beautiful weather. This recipe is particularly great because it has the awesome General Tso's flavor but is way healthier since it isn't breaded and deep-fried.
Also included are directions for cooking basic white rice. This is going to sound crazy but up until a couple of months ago, I had never cooked rice on the stove top! I had a rice cooker that I had always used but during our simplification purge I decided to get rid of any small kitchen appliances that had limited uses which included the rice cooker. Turns out the stove top version is just as fluffy and easy to make.
Slow-Cooker General Tso's Chicken
Ingredients:
4 Garlic Cloves, minced
3 Tablespoons Brown Sugar
1 teaspoon Ground Ginger
2 Tablespoons Soy Sauce
1/2 teaspoon Crushed Red Pepper Flakes
1 lb. Boneless, Skinless Chicken Breast, cut into 1-inch chunks
In a large bowl, combine garlic, brown sugar, ginger, soy sauce, and red pepper flakes. Stir until smooth. Add chicken and toss to coat. Dump everything into your slow-cooker and cook on low for 6 hours. Serve with white rice and steamed broccoli.
Basic White Rice
Ingredients:
4 cups Water
2 cups Uncooked White Rice
In a medium saucepan, bring water to a boil. Stir in rice so that it is all covered with water. Cover and reduce heat to low. Simmer for 20 minutes or until water has all been absorbed and rice is cooked through. Fluff with a fork.
