A couple of months ago I tried a recipe for cake batter cookies that included pudding mix. They were okay but I thought the pudding made them taste overly processed so I continued searching. This recipe turned out to be exactly what I was hoping for! Full of cake batter flavor but in cookie form. Have I mentioned how much I LOVE this cake batter craze? :)
Cake Batter Cookies
adapted from Sally's Baking Addiction
Ingredients:
1 1/4 cup All-Purpose Flour
1 1/4 cup Yellow Boxed Cake Mix (nothing added)
1/2 teaspoon Baking Soda
3/4 cup Unsalted Butter, room temperature
1/2 cup Granulated Sugar
1/2 cup Light Brown Sugar
1 egg
1/2 Tablespoon Pure Vanilla
2 Tablespoons Sprinkles
In a medium bowl, combine flour, cake mix, and baking soda. Set aside. In a large mixing bowl, cream butter and sugars on medium speed. Add the egg and vanilla. Mix until creamy
Gradually add the flour mixture and mix until just combined. Cover and refrigerate for at least one hour or up to four days.
Preheat oven to 350F.
Make 1" dough balls using a cookie scoop. Place on an ungreased cookie sheet. Bake for 10-12 minutes or until bottoms are lightly browned.
Allow cookies to cool for 2-4 minutes then transfer to a wire rack to cool completely.

I can't wait to try these cookies. I wander how they would taste with white cake mix since that's what I have now.
