Thanksgiving is in just a few days and it makes me want to add pumpkin to everything! Shelby made this pumpkin butter for his dad's birthday and it is so delicious, I can't wait to make another batch!
Pumpkin Butter
adapted from All Recipes
Ingredients:
29oz can Pure Pumpkin Puree
3/4 cup Apple Juice
2 teaspoons Ground Ginger
1/2 teaspoon Ground Cloves
2 teaspoons Ground Saigon Cinnamon
1 teaspoon Ground Nutmeg
1 1/2 cups Granulated Sugar
Place all ingredients in a large saucepan and stir until well combined. Bring to a boil. Reduce heat and simmer for 30 minutes, stirring frequently.
Remove from heat. Pour into five sterile half-pint jars. Chill in refrigerator until ready to serve.
Makes 2 1/2 pints
