Beef and Bean Enchiladas


So far I have shared recipes for Chicken Enchiladas, Enchiladas Verdes, Chicken Enchilada Pasta, and Beef Enchilada Pasta. So it should be pretty obvious that I LOVE enchiladas. I also like variety though which is why I have recipes for so many different kinds. Today I am adding another - Beef and Bean Enchiladas. They taste just as good (if not better) than any that I have had in a restaurant. Give them a try the next time you are craving Mexican food.

 Beef and Bean Enchiladas

1 Yellow Onion, diced
2 Garlic Cloves, minced
1 lb Ground Beef
4oz can Diced Green Chilies
15oz can Refried Beans
8 Flour Tortillas
2c Mexican Cheese Blend (not the kind with taco seasoning added)
15oz can Enchilada Sauce

Preheat oven to 350F. In a large skillet, brown ground beef over medium-high heat. Half-way through cooking, add onion, garlic, and green chilies. Continue cooking 3-6 minutes or until beef is cooked through and onions are soft and translucent.

Spread some enchilada sauce over bottom of 9x13" casserole dish. Spread a spoonful of beans down the center of a tortilla. Add a large spoonful of beef mixture. Spoon enchilada sauce over beef. Spread a handful of cheese over. Roll the tortilla around this mixture and place in the prepared casserole dish. Repeat with remaining ingredients, reserving some of the enchilada sauce and cheese. Spoon the sauce over the filled tortillas and spread around to cover the tortillas entirely. Top with the remaining cheese.

Bake, uncovered, at 350F for 20 minutes or until heated through and cheese is bubbly.
