Whipped Potatoes

This recipe is actually one that my husband, Shelby, came up with!  He has been making these for family gatherings for years now and I finally got him to measure things out and write it down so that I could share this deliciousness with you.  :)  They are basically mashed potatoes but so much fluffier and creamier.



Whipped Potatoes

Ingredients:
6 large Russet Potatoes
4 Tablespoons Butter
2 Tablespoons Sour Cream
1/2 cup Milk

Peel potatoes and chop into 1-inch cubes.  Place in a dutch oven or other large pot and cover with water.  Bring to a boil.  Reduce heat and simmer 15-20 minutes or until potatoes are tender.

Drain potatoes and transfer to a large mixing bowl.  Add butter, sour cream, and milk.  Beat on low speed until most of the chunks have been mashed.  Gradually increase the speed to highest setting.  Whip until smooth.  

Serve hot along side your choice of meat and veggies.  :)

Makes about 6 cups.
