Slow-Cooker Coffee Pot Roast


The weather forecast is calling for snow today! What better time to break out the comfort food recipes? I have been making this pot roast for years and it is so easy and flavorful. Not to mention the perfect meal to warm you up on a cold winter's night.


Slow-Cooker Coffee Pot Roast

Ingredients:
2 1/2 lb Boneless Beef Sirloin Roast
2 teaspoons Vegetable Oil
1/3 cup Sliced Green Onions
2 Garlic Cloves, minced
3 cups Hot Water
4 rounded teaspoons Instant Coffee
1 teaspoon Liquid Smoke
1 teaspoon Salt
1 teaspoon Chili Powder
1/2 teaspoon Ground Black Pepper
2 cups Baby Carrots
3 Russet Potatoes, cut into 1-inch cubes

In large nonstick skillet warm oil over medium-high heat. Add roast and brown on all sides. Place roast in 5-quart slow cooker. Add carrots and potatoes.

In the same skillet, saute onions and garlic until tender. Combine instant coffee and hot water. Stir into onion and garlic mixture. Add liquid smoke, chili powder, and pepper. Stir until combined. Pour over roast and vegetables.

Cover and cook on low 8-10 hours or until meat is tender. Serve hot.
