This recipe is kind of like the one for Chess Cake: it has been around for decades and lots of people make it but call it by a different name. I got this one from my grandma and the name is a little misleading because you can actually make it with any pudding flavor you want. She always made lemon because it was grandpa's favorite. It is also amazing with chocolate which I have seen some people call Chocolate Cream Cheese Delight. Someone else made it with coconut cream pudding and called it Texas Delight. We aren't from Texas though so I thought about calling it Southern Delight but in the end I decided to go with my grandma's "Lemon Lush".
I usually like to make this with lemon in the summer because it is light and refreshing. In the winter I typically choose chocolate to give it a richer flavor. No matter what flavor you choose, it always tastes amazing!
Lemon Lush
Ingredients:
1 1/2 cup Self-Rising Flour
1/2 cup Granulated Sugar
1 cup Unsalted Butter, softened
8oz Cream Cheese, softened
1 cup Powdered Sugar
8oz Cool Whip, divided
3 1/2 cup Milk
2 pkg (3.4oz each) Lemon Instant Pudding (or flavor of choice)
Preheat oven to 350F.
In a large bowl, mix self-rising flour, granulated sugar, and butter with a fork. Press into the bottom of a 9x13" cake pan. Bake at 350F for 20 minutes or until lightly browned around edges. Let cool completely.
In a large bowl, use an electric mixer to blend cream cheese, powdered sugar, and 1 cup cool whip. Beat until smooth. Spread over cooled crust.
In a large bowl, combine pudding mixes and milk. Beat with a whisk for 2 minutes. Chill in fridge for 5 minutes. Spread over cream cheese layer.
Top pudding layer with remaining cool whip.
Refrigerate until ready to serve.
