Eyeball Cake Balls


After seeing these cake balls and these cookie balls, I decided to combine the two and came up with my own Eyeball Cake Balls.  I did a test-run to make sure they were good enough for the party and I am really glad that I did because I ended up having some trouble with them.  I'll explain all of that a bit later though.


There seem to be cakeball tutorials EVERYWHERE these days but I am including my own so that in the future I can remember exactly what I did.  So a lot of this is for myself but I hope that some of you will find it helpful too.  :)

INGREDIENTS:
9x13" Cake (from scratch or a box)
1 can Icing (again, you could make your own)
1 tube of Red Gel Icing  (I used the glitter kind)
M&Ms
1 pkg Log House Vanilla CandiQuick Coating


Bake your cake as you normally would and allow to cool completely.  If you are impatient like I am you can cut your cake into about six large cases and move to a wire rack to cool faster.  Once it is cool, cut away the edges so you don't have any hard parts and crumble the remaining cake into a large bowl making sure the crumbs are as fine as possible.

Add about 3/4 of the can of frosting to the cake crumbs and mix together until it all sticks together.  Add more icing if necessary.


Use a cookie scoop to measure out even balls of the cake mixture and roll each one in your hands to round them out.  Place on a cookie sheet covered with waxed paper and place in the freezer for a few minutes until the balls are somewhat solid.


This is where things went wrong the first time.  I originally tried making them with Wilton's Candy Melts.  I was able to melt it until smooth but it still just wouldn't get runny enough.  The coating was too thick so it was impossible to get it smooth.  With some of them I let the coating cool just a bit then rolled them in my hands again which helped smooth them out but it still wasn't what I was hoping for.



I still had a bunch of cake balls left so I decided to try again with some CandiQuick and it worked great!  The candy coating melted down perfectly.  Not only was I able to get the smooth finish that I was going for but the coating wasn't as thick so they weren't overly sweet like the first batch.

Just melt down your candy coating, dip your slightly frozen cake balls in and put them back on the waxed paper.  Let the coating harden a little bit then place an M&M in the middle.  Put them all in the freezer for a few more minutes until the coating is hardened.  The coating will puddle around the bottom so if you want them to look perfectly round, use a knife to carefully shave away the excess coating.  Use your red gel icing to make them look bloodshot and you are all done!


The result is a gruesome but delicious cake ball.  If you have never had them before, let me tell you that they are highly addictive.  The cake and icing mixed together gives the center a dough-like quality so if you are like me and have a hard time resisting the urge to eat raw cookie dough - you will love them!

So Cute! I will definitely be making these with my kiddos this month. Last week I was helping my sister with cake pops and we were having a lot of trouble with melting the chocolate to the right consistency. I have made cake pops several times before and didn’t have a problem with the chocolate. Anyways to make a long story short a cake popper commented on her blog and told her to invest in a Wilton chocolate melting pot. She said it makes all the difference. I will be purchasing one of those in the near future because I love making cake pops!

My sister left a comment too! But I'd just like to add that I thought I was going to have a nervous breakdown with the wilton's chocolate! I found some that KINDA worked, but still not what it should have been. Here are mine : )
