Toffee Sandies


These cookies are sort of like a shortbread cookie with toffee bits and they are absolutely delicious! 


Toffee Sandies

Ingredients:
1 cup Butter (no substitutes), softened
1 cup Granulated Sugar
1 cup Powdered Sugar
1 cup Vegetable Oil
2 Eggs
1 teaspoon Almond Extract
4 1/2 cup All-Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Cream of Tartar
1 teaspoon Salt
1 pkg (8oz) English Toffee Bits
Additional Sugar (optional)

Preheat oven to 350F.

In a large mixing bowl, cream butter and sugars. Add oil, eggs, and extract. Mix well.

In a small bowl, combine flour, baking soda, cream of tartar, and salt. Gradually add to creamed mixture. Fold in toffee bits. Use a cookie scoop to shape into 1-inch balls. Roll in additional sugar (if desired). 

Place on an ungreased cookie sheet and gently flatten with the palm of your hand. Bake at 350F for 12-14 minutes or until edges are lightly browned.

Makes 6 Dozen.
